BBQ Chicken and Sweet Potato

For dinner tonight, I had a BBQ Chicken Breast, a sweet potato, and a salad with garlic toast.

Items needed:

  • I pkg Tyson Chicken Breasts
  • 1 Sweet Potato
  • Dinner bread (steak or hoagie rolls)
  • Butter
  • Cinnamon sugar
  • 1 Bag iceberg salad
  • Shredded cheese
  • Salad dressing
  • Spices: Salt, Pepper, Garlic Powder, Italian Seasoning, Dried Onions
  • 12V Burton Oven
  • Aluminum Foil
  • 1 Aluminum Bread Pan
  • Wax Paper
  • Freezer bag

You'll normally have two chicken breasts in a package, but you'll likely only cook one at a time. The best way to preserve the one you won't be cooking is to wrap it first in wax paper, then aluminum foil, and then place it in a freezer bag. (If you don't have a freezer, I recommend going ahead and cooking them both, or wrapping it up and putting it at the bottom of your cooler to keep it from spoiling.)

To prepare your breast selected for dinner, lay it on a piece of aluminum foil and add your spices. I used garlic powder, salt, pepper, Italian seasoning, and dried onions. You can use whatever spices you choose. Wrap it tightly in the foil, place in a ziplok bag, and put it in the fridge until you're ready to cook it. (For my dinner today, I prepped the breast while I was fixing my lunch.) To prepare your sweet potato, simply poke holes in it with a fork and wrap it in foil.

When you're ready to begin cooking, Plug in your Burton oven and pour about 10 oz of water in the bottom. Place an aluminum bread pan in the water. Place your wrapped breast and sweet potato side-by-side in the bread pan. Close the lid. It will take about 1.5 - 2 hours to cook.

I started mine today at 4:45 and let it go until about 6:30.  My plan was to get through Washington DC and pull over and eat. Traffic was not on my side. The oven does not contain the smell of the cooking food, so about half way through the traffic jam, I was ready to eat. I found a safe place and pulled over to the shoulder on I-495. I checked the potato and it wasn't quite done, so I pulled the breast out and closed the lid. I plugged in my toaster oven and set it to "Toast." I put lined the metal tray with foil and placed the breast on it. I then poured some BBQ sauce on the breast and rolled it. I put it in the toaster oven and let it cook with the BBQ sauce on it for about 5 minutes. After it was done, I buttered my dinner bread and seasoned the butter with garlic powder. It takes about 5 minutes for the bread to toast.

Once I plated the breast, I took the potato out of the oven and cut a slit in the top of it. I added butter and cinnamon sugar.

The picture gallery below shows the steps I took in prepping the breast and saving the other for the freezer. It took about 10 minutes for prep and another 15 once everything was ready to come out of the oven. Clean up was easy since everything was either paper or aluminum except for my silverware.

Dinners like these take very little time to prepare and can cook while you're driving. A meal like this probably cost me $5-7 and the quality is MUCH better than you'll get in the truck stop.
